Thanks for visiting THE BIG FARM and THE BIG FARM Creamery.

I'm continuing to test new cheeses, and improve on existing types.

In the second category, I've changed cultures for our Camembert-type cheese and am extremely pleased with the results. Look for more Camembert cheeses in the early summer. In the first category, I've been fussing with a popular French cheese called Comte, which I think is close to where I want it to be; time will tell the tale as we wait for these new cheeses to come of age.
